Red Potato & Strawberry Latkes with Mint Cream

Balsamic Strawberries:

2 cups sliced strawberries

1/3 cup packed brown sugar

3 tablespoons balsamic vinegar

 

Potato Latkes:

1 pound Black Gold Farms Red Potatoes

2 eggs

1/3 cup all-purpose flour

1 tablespoon brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

2 tablespoons canola oil

3/4 cup 35% whipping cream

2 tablespoons maple syrup

1 tablespoon chopped fresh mint

Icing sugar, for dusting

Preparation

Balsamic Strawberries: In large skillet, combine strawberries, brown sugar and balsamic vinegar set over medium high heat; bring to boil. Cook, stirring frequently, for 5 to 7 minutes or until thickened. Let cool completely. 

Potato Latkes: Grate potatoes on large holes of box grater. Transfer to clean kitchen towel; roll up and squeeze out as much liquid as possible. Toss together potatoes, eggs, flour, brown sugar, baking powder and salt.

Heat oil in large nonstick skillet set over medium heat; using 1/4 cup batter per latke, cook in batches for 3 to 5 minutes or until edges of potato start to brown and turn crispy. Flip over; cook for 2 to 3 minutes or until bottom is golden brown. Transfer to paper towel­–lined plate. Meanwhile, using electric beaters, whip cream until stiff peaks form; stir in maple syrup and mint.

Serve latkes with Balsamic Strawberries and dollop of whipped cream. Dust with icing sugar.

TIPS:

  • Alternatively, serve latkes with sweetened sour cream or yogurt.
  • Garnish with a few fresh strawberries if desired.
  • Keep latkes warm in the oven or make ahead and reheat in 350˚F oven until heated through.
