Massaman is a popular Thai curry with Indian influences. This quick and easy version combines mild Thai curry paste with Indian garam masala for a rich and satisfying dish.

1 1/2 lb Black Gold Farms Red Potatoes, cut into 2-inch chunks

1 tbsp canola oil

1 onion, chopped

2 cloves garlic, minced

1 tbsp minced fresh ginger

2 tbsp mild Thai red curry paste

1 tbsp brown sugar

1 tbsp garam masala spice blend

1 can (14 oz) coconut milk

1 cup sodium-reduced chicken broth

1 tbsp fish sause

1 tbsp soy sauce

1 tbsp lime juice

1/4 tsp salt

1 cup sticky rice, cooked according to package directions

1/4 cup fresh cilantro leaves

1 fresh Thai chili, finely sliced (optional)

Lime wedges, for serving

Preparation

Heat oil in deep skillet or wok set over medium-high heat; cook onion, ginger and garlic, stirring, for 1 minute. Stir in curry paste, sugar and garam masala; cook for 1 to 2 minutes or until fragrant.

Stir in coconut milk, broth, fish sauce, soy sauce, lime juice and salt; bring to boil. Add potatoes; reduce heat to medium. Cook for 15 to 20 minutes or until potatoes are tender and sauce is thickened.

Spoon over sticky rice. Sprinkle with cilantro, and Thai chili (if using). Serve with lime wedges. 

TIPS:

  • Add canned chickpeas, green beans, bok choy or cauliflower florets to curry.
  • Garam masala is a popular Indian ground spice blend; there are many versions, but it often contains cardamom, cinnamon, nutmeg, cloves, cumin and pepper. It's available in most supermarkets in the spice or international aisle.
